Steeping Guidelines

Traditional Gongfu Style

Pre-warm the gaiwan or Yixing teapot. Use a tea-to-water ratio of 1:15 to 1:20. Brew with water at 100°C (212°F). For the first three infusions, pour the water directly from a fixed height onto the leaves to release their aroma, and immediately pour out the tea liquor—do not let it steep. From the fourth infusion onward, gradually increase the steeping time by 5 seconds with each brew. Pour the tea liquor completely out after each infusion. For best results, use high-quality bottled water to preserve the tea’s delicate floral and creamy notes.
